New York superstar chef Jean-Georges Vongerichten has opened Market, his Asian-tilted salute to Pacific Northwest cuisine, in the newly unveiled, luxurious Shangri-La Hotel. J-G says things went so smoothly that on the second night of service he had time to go night skiing on Cypress Mountain, 20 minutes from downtown. The local buzz is all about value and quality: a $28 three-course lunch and a $65 six-course tasting-menu dinner, including the likes of sea urchin and soy-glazed short ribs.
