How do you foster anticipation for a new restaurant in a city that’s already packed with great dining options? Well, it helps to host Brad Pitt, Colin Firth, and Jennifer Aniston before you’re even officially open. So it was for Hudson Kitchen; significant early buzz has translated into consistently busy dinner and brunch services for the low-key Dundas West eatery. Now, a pair of intimate dining spaces (plus a private room) welcomes local foodies seeking chef Robbie Hojilla’s contemporary, health-conscious dishes, on which the likes of pork, veal, and trout share equal billing with vibrant seasonal vegetables and nutritious, texture-enhancing grains.
