Michael Caballo and Tobey Nemeth have a lot to live up to. Their new restaurant, Edulis, fills a space long occupied by the beloved Niagara Street Café. There’s also the fact that they were the culinary power couple in Toronto, before picking up stakes in the summer of 2008. Rest assured, the kudos remain well deserved. Back after four years abroad, chef Caballo and his wife—also an acclaimed chef, but now handling front-of-house duties—have given this city an intimate ode to the country cuisine of Spain and France. The daily à la carte menu offers many equally toothsome tastes; consider skipping the decision making by ordering Caballo’s tasting menu ($50 or $70) instead.
