You could say his family tree is full of sweets: Thomas Haas is a fourth-generation pastry chef whose great-grandfather opened the Café Conditorei Haas in 1918 in Germany. Haas has spent his entire life perfecting the delicate art of pastry and chocolates, working in top restaurants in Europe and North America before opening his own shop, Thomas Haas Chocolates and Patisserie. He uses both traditional and new recipes to create exquisite handcrafted confections, with as many local ingredients as possible and no preservatives or artificial flavours. What a delicious idea.
