Star shaker Jay Jones (pictured) and chef Chris Irving (formerly at West) have taken the wraps off their Pourhouse in Gastown. While the focus is very much on the bartender’s long bar—try his Gold Fashioned (pictured), an Old Fashioned variation made with Vista d’Oro port-style wine, Maker’s Mark and maple syrup—the menu delivers homespun treats such as campfire trout and apple tatin with whisky caramel.—Tim Pawsey
