Chef David Hawksworth’s namesake restaurant is the crown jewel of the gorgeously renovated Rosewood Hotel Georgia, with dazzling Alessandro Munge decor in each of four distinct dining rooms. In the crystal-chandelier-crowned Pearl Room the look is vaguely mid-century Hollywood glam—with cream trim, marble-topped tables and pearl-coloured banquettes.
The place buzzes with exuberant diners discovering the detail-driven dishes, made with locally sourced ingredients: yellowfin tuna carpaccio with avocado, yuzu and cilantro, for example; and slow-cooked halibut with chorizo and artichoke.
